Roastbeef mit Erdäpfelschmarrn / Roastbeef with pan fried potatoes


Zutaten (2-4 Portionen)

800g Roastbeef
4 mittlere Kartoffel
1 Apfel
100ml Apfelcider
1/2 Chillischote
1EL Essig
1EL Honig
100g Pilze (z.B. Birkenpilz)
1EL echten Kakao
1 Bund Dill
1 Becher Joghurt
Salz, Pfeffer, Zimt

Zubereitung

Heute gab es etwas leckeres, deftiges, mit österreichischen und amerikanischen Einflüssen zu Mittag. 

Den Anfang macht die Marinade für das Fleisch. Dafür wird der Apfel geschält, entkernt und in kleine Würfel gehackt. Auch die Chillischote wird entkernt und in kleine Stückchen geschnitten. Anschließend kommt beides in einen heißen Topf mit Öl und wird gemeinsam mit dem Honig kurz angeschwitzt. Anschließend wird mit dem Cider aufgegossen und der Essig, eine Prise Zimt und etwas Salt werden hinzugefügt. Die Marinade sollte nun für etwa 10 Minuten leicht köcheln.

Währenddessen müssen wir eine Tasche, für die Füllung, in das Fleisch schneiden. Dafür einfach mit einem Messer nahe dem oberen Rand in das Fleisch schneiden, sodass nach oben und in die Seiten etwa 1cm Rand bleibt. An der Oberfläche wird das Fleisch ebenfalls leicht eingeschnitten.

Im nächsten Schritt bereiten wir die Füllung vor. Dafür werden die Pilze in kleine Würfel geschnitten und mit Salz und Pfeffer in Olivenöl angebraten. Die Pilze sollten so lange gebraten werden, bis nur noch wenig Flüssigkeit vorhanden ist. Dann wird etwa 1EL Kakaopulver untergerührt und die Füllung ist fertig.

Nun kann das Fleisch mit der Hälfte der Marinade von allen Seiten bestrichen werden. Anschließend kommt das Fleisch in eine sehr heiße Pfanne mit Öl, wo es von allen Seiten scharf angebraten wird (mit allen Seiten ~5 Minuten). Danach wird das Fleisch mit den Pilzen gefüllt, mit dem Rest der Marinade bestrichen und in einer Backform bei 80°C in das Backrohr gegeben. Dort wird das Fleisch nun 1-2 Stunden garen.

In der Zwischenzeit werden die Kartoffel für 20 Minuten gekocht und anschließend in Würfel geschnitten. Diese werden dann in einer Pfanne mit Öl, Salz und Pfeffer gebraten bis ein schöner gold-brauner Erdäpfelschmarrn entsteht.

Für die Sauce wird der Bund Dill fein gehackt und gemeinsam mit dem Joghurt vermischt. Abgeschmeckt wird mit Salz und Pfeffer.

1/2 chillipepper
1EL vinegar
1EL honey
100g mushrooms (e.g. birch polete)
1tbsp. cocoa
1 bunch of dill
1 cup of joghurt
salt, pepper, cinnamon

Preparation

Today I had some tasty, solid roast beef with austrian influences for lunch.

We will start with the marinade, which we need for the meat. Therefor the apple gets washed, peeled and pitted. Afterwards it is cut into fine cubes. The same is done with the chillipepper. Then the apples and chillipeppers are heated together with the honey within a pot with oil. As soon as they start to get glazed you can add the cider, the vinegar some cinnamon (not too much) and salt. The mixture should now simmer for about 10 minutes.

Meanwhile we prepare the meat by cutting a pocket for the filling into it. Therefor you just have to cut near to the upper edge into the meat so that a border of 1cm remains to each side. Also the surface of the meat is slightly cut, so that the marinade can better settle.

The next step is to prepare the filling. Therefor we cut the mushrooms into small cubes and fry them with a bit of salt and pepper in a pan. As soon as most of the leaking liquid has vaporized we add the cocoa and remove the pan from the heat.

Next the meat is covered with half of the marinade and fried in a pan from every side (not more than 5 minutes overall). Afterwards the meat is filled with the mushrooms and covered with the rest of the marinade. Put the meat into a baking dish and into the oven at 80°C for about 2 hours.

Meanwhile the potatoes should be cooked for about 20 minutes. Then you cut them into smaller pieces and fry them with oil, salt and pepper till the look like in the picture.

For the sauce you just cut the dill, mix it together with the yoghurt and add salt and pepper for the taste.
